The recipe (Sweet pepper) is an authentic traditional recipe.

 

SWEET PEPPER

Materials:

2 kilos of red peppers (thin),

1 kg of walnuts

2 kilos of onions

1 tablespoon allspice, grains

1 tablespoon black pepper, grains

1 tablespoon red sweet pepper

1 tablespoon of oregano

1 tablespoon cumin (spice powder)

1 cup cornmeal 1 tablespoon dry mint

1 bunch of parsley

5 cloves of garlic

 

Running time approximately 60 minutes

Portions: 1 1/2 kg approx

 

IMPLEMENTATION

     Wash the peppers well and clean them from the seeds. Boil them in a large pot until they are well softened and then leave them in a colander to drain until they cool and dry completely.

     When they are ready, put them in a large bowl, and knead well. Then add all the remaining ingredients and knead the mixture very well, so that it becomes homogenous.

     Then, flour the pans we will use with cornmeal and start filling them with the pepper mixture we made. 

     We leave them outside in the sun to do its job (it will bake them), until they dry well and we rub them, mixing daily until our material is completely dry.

     This will take us about a week. When they are well dried, we put them through the blender to make them powder. 

     Sweet pepper is ready to be used in almost all of our foods.
